You're going to love the flavor of these homemade sausage patties, crisped up in the air fryer for a healthier brunch option without the oil. Made leaner with ground turkey, they're just as delicious as the classic pork version. Pair them with scrambled eggs, buttery sourdough, or sweet treats like pancakes for the perfect brunch meal!

Ingredients

1 lb. ground turkey (light or dark meat)

1 Tbsp. light brown sugar

2 tsp. finely chopped fresh sage leaves

3/4 tsp. kosher salt

3/4 tsp. smoked paprika

1/2 tsp. crushed red pepper flakes 

1/2 tsp. fennel seeds, crushed

1/2 tsp. garlic powder

Olive oil cooking spray

Directions

Step 1

In a medium bowl, combine turkey, brown sugar, sage, salt, paprika, red pepper flakes, fennel seeds, and garlic powder with a fork or your hands until evenly combined. Using damp hands, form turkey mixture into 8 thin patties about 3″ in diameter and 1/4″ thick (the meat will puff up in the air fryer).

Step 2

Grease an air-fryer basket with cooking spray. Working in batches, arrange patties in basket, spacing about 1/4″ apart (do not overcrowd). Cook at 400°, flipping patties halfway through, until golden and crisp, 5 to 8 minutes.
